On June 29th, Chef Korey will prepare Vichyssoise with a twist, citrus salad with bitter greens, mesquite grilled beef tenderloin, chocolate crepes rolled with an orange & basil ice cream. Come and experience the elegance of fine cuisine. "Our main objective is to have our students walk away with some special recipes that they can recreate once they get back home in their own kitchen" said Chef Korey. At the July 31st class, Chef Korey will prepare a light strawberry soup made with local fresh strawberries, spinach salad, Asian marinated Ahi Tuna and fresh fruit marinated in a ginger & lime simple syrup coupled with granola and yogurt. The third class on August 21st will feature cold cantaloupe soup made with yogurt, sour cream and coconut rum, and tender spinach leaves topped with tangerines and red onions. Seafood Fra Diavolo an assortment of shellfish tossed with a mildly spicy marinara sauce will be the main entrée followed by warmed chocolate fettuccini topped with French vanilla ice cream for dessert. Chef Korey graduated from SUNY Cobleskill with an AOS in the professional chef program. He also attended the Culinary Institute of Arts. His professional experience as a chef includes working at Geneva Inn on the Lake and most recently at Esperanza Mansion on Keuka Lake. Cooking Class will be held from 11:30AM to 1PM on the creek stone terrace at Rooster Hill Vineyards. The cost of the each class is $29.95 per person and reservations are required.
