the unknowns in this business of mixing science and art, Rooster
Hill has fitted the winery with state-of-the-art equipment
for both the winemaking process and care of the wines. Such
care has been taken to control the conditions that the entire
operation can be managed by a handful of people to maintain
the ideal conditions for aging and storing wines year round.
We are
proud of our equipmentsuperlative French and American
oak barrels for controlled agingDiFrechesci Press (and
Milani Crusher / de-Stemmer for production). The winery contains
over 8000 gallons in stainless steel tanks and French oak
barrels. A state of the art laboratory enables the winemaker
to closely monitor the wines so that they can achieve their
true potential. Rooster Hill takes an innovative approach
in the area of wine production. We use the latest techniques
in production and cooperate with manufacturers for the best
results from their products.
